My husband enjoys the Zuppa Toscana soup from Olive Garden! So I decided to look online and see if anyone had a mock recipe for this soup. I came across the pioneer woman who has a take on this soup from Olive Garden. So I decided to add my own twist to it.
Kale and Potato Soup
Turkey meatballs (premade) or chicken sausage
¼ cup heavy cream
¼ cup onion
2 red skin potato
1 cup chicken broth or ( chicken broth bullion cube)
1 cup half and half
1 cup of milk (evaporated)
2 teaspoon Ms. Dash (Italian medley)
3 cups of water
Peel and cut potato into cubes add to pot of 2 cups water and boil.
When potatoes are finished drain and put them to the side.
Wash kale and tear into small pieces.
In a container add 1 cup of boiling water and add bullion cube (chicken broth) let dissolve.
Cut each meatball into 4 sections.
In a pot cook onion then add meatballs browning them on all sides.
Stir in chicken broth, half and half, and milk into pot. Then add in 1 tea spoon of Ms. Dash seasoning and pour in only half of the heavy cream.
Let cook for 25 minutes with lid on stirring occasionally.
Lastly add potatoes, Kale, the rest of the heavy cream and Ms. Dash cook for 20 minutes stirring occasionally.
