Day 29: Wednesday’s Recipe

Welcome to day 29 of the 31 day Challenge!!

The month has gone by so quickly. Before you know it Thanksgiving will be upon us.  So with that being said I wanted to share my recipe for

Candied Yams


1 can    Pineapple Chunks
¾ – 1 cup of Syrup
2 cans  Princella Cut Sweet Potatoes (40 .oz can)
2 Tbs   Brown Sugar
1 tsp    Cinnamon
1 pinch Nutmeg
*Olivio (Margarine,  butter can also be used)

Pre-heat Oven to 350 degrees
Open both cans of cut sweet potatoes and pour into pyrex/casserole dish. Open can of pineapples and place chunks into all spaces amongst the yams. {Optional you can also place chunks around the bowl.}  Sprinkle the brown sugar over pineapples and yams. Then sprinkle cinnamon over pineapples, sugar, and yams.  Then sprinkle pinch of nutmeg over everything.  Slowly pour syrup over everything in bowl. Do not let syrup reach the top of the dish. Lastly add 6 dollops of olivio to the dish.
Cover dish with foil.  Place in oven.  Cook for a total of 45 minutes during the last 15 minutes remove the foil and let it continue cooking.

*Pineapples you can use a small can or large can depending on preference
